Ultimate Vegetarian Chili
3 tbs. EVOO (extra virgin olive oil)
1 box of Boca® Burger ground meat
1 large onion, chopped
1 green pepper, chopped
1 small jar roasted red peppers, drained & chopped
1 stalk celery, chopped
3 tsp. roasted garlic minced garlic from a jar or 3 cloves fresh garlic, crushed
1 (14.5 oz) can diced tomatoes
1 (28 oz.) can crushed tomatoes
1 (15.5 oz) can light red beans
1 (15.5 oz.) can black beans
1 (15.5 oz.) can red kidney beans
2 (8 oz.) cans mushrooms
1 (14.5 oz.) can vegetable broth
1/2 tsp. each –
ground cumin, basil, oregano, parsley, paprika, thyme, and salt.
3 tsp. chili powder
fresh ground black pepper to taste
Place olive oil in skillet, heat on medium, then add onion,
garlic, and all spices and herbs. Cook until onion is transparent. Add celery,
red and green peppers. Cook until vegetables are tender. Transfer to crock pot.
Then add In pan vegetable were cooked in, place Boca Burger and heat through
thoroughly. Transfer Boca Burger to crock pot. Add tomatoes, beans, mushrooms,
broth and mix thoroughly. Bring to a boil, then reduce to a simmer for a minimum
of 2 hours, stirring occasionally (once per hour).
The longer you simmer the better it will taste – the flavors meld and
mingle and create a flavor fusion. The best way to do this is to use a crock
pot, set on high. You’ll have Ultimate chili in 3 – 4 hours.
Dot individual bowls with sour cream and shredded cheddar if desired.
HOT CHEESE DIP
1 (8 oz.) pkg. cream cheese
1/2 c. mayonnaise
4 oz. shredded Swiss cheese
3 tbsp. green onions, chopped fine
8 – 10 strips bacon, fried crisp & chopped fine
1/2 c. crushed crackers (Ritz)
Microwave cream cheese on medium power for 30 seconds. Mix
cream cheese, mayonnaise, Swiss cheese and onions until blended, then microwave
on high power for 3 - 4 minutes. Add bacon, and crushed crackers. Mix and serve
warm. You can use your favorite cheese in place of Swiss. Serve with Fritos
Scoops, crudités or crackers.
